I've rounded up a few of my favorite Whole30 recipes that would be PERFECT for celebrating Cinco de Mayo! I've got you covered for everything from breakfast to dinner to dressings.
So kick back, have a taco (or 3), and cue the mariachi.
Let's kick things off with some of my favorite Whole30 recipes to date! Did you catch this recipe series for the Whole30 Blog?! These four would be the PERFECT place to start with prepping for your Cinco de Mayo fiestas! I had so much fun with this series and could not be happier with how these recipes turned out. Please let me know if you try them, and don't forget to use the hashtag #whole30doestt and #mariamakes!
This salsa chicken can be made in your instant pot, slow cooker, OR in the oven; and you can make it your own by choosing your very own favorite store-bought (or homemade) salsa! Perfect for burrito bowls, tacos, and salads!
Ranch dressing makes the perfect topper for any kind of taco bowl or salad. It's also amaaaazing drizzled over my Taco Twice Baked Potatoes (link below). Mix in a jalapeno, some cilantro, and/or some cumin for a festive flavor twist. Ranch it up my dudes!
Why not get your salsa fix in first thing in the morning!? Shredded chicken, salsa, and veggies come together in this egg bake for a tasty and festive breakfast.
Why not pair the creamy goodness of ranch dressing with the creamy goodness of avocados!? This dressing is a delicious creamy compliment to any Mexican dish!
The crisp factor is the key ingredients in these Crock Pot Carnitas! This is one of the most popular recipes of ALL TIME on Maria Makes, and for good reason. Throw everything in a crock pot and forget it until dinner time.
This casserole is a little more involved than some of my other recipes, since you have to cook the chicken, make the enchilada sauce, and spiralize the sweet potatoes, ALL before baking the casserole -- but if you have some extra time to spare, it's SO totally worth it!
You can prep these potatoes the day before, then bake them when you need them! Serve them up with all of your favorite taco fixins: good ol' iceberg, chopped onions, avocado, jalapenos, tomatoes, and Avocado Dump Ranch!
One of my very fave make-ahead lunches, this recipe makes a ton and is 100% customizable for whatever veggies you like (or whatever you have on hand)!
Guacamole + Chicken Salad = Lyyyfe. Thanks to the lime juice, this keeps all week in the fridge, making it perfect for office lunches!
Back in 2015, I did a recipe series with the Whole30 blog that was alllll about freezer cooking! It just so happens that two of those recipes would be perfect for Cinco de Mayo.
