Once upon a time, I made cauliflower rice at home. Let's do a count of the dirty kitchen items I had to clean afterwards. We'll call this the DKI count (dirty kitchen item count) I cut a head of cauliflower into small chunks (1 - knife, 2 - cutting board), resulting in bits of cauliflower all over my counters and floor (3 - counters, 4 - floor). THEN, I put it in my food processor to pulverize it into rice-sized pieces (5 - food processor). Then I microwaved it, (6 - dirty bowl). I think at that point, I made it into a cauliflower pizza crust. Final DKI count = 6. That was about 2 years ago and I never attempted it AGAIN.
Fast forward to two days ago when I learned that Trader Joes now carries organic riced cauliflower at $1.99 for a 12oz bag (~3 servings)! WHAT!? Ahh, my love for Trader Joes grows deeper every single day.
So when I went to TJ's after work today to stock up on my fave Chili Lime Chicken Burgers and a few bags of dried mangos, I ALSO picked up 4 bags of organic riced cauliflower! And I am SO glad I did. I cooked some as a side dish for tonight's dinner and it was SO fast and easy. DKI count = 2. YASSSSSS!
This recipe for Cilantro Lime Cauliflower Rice is super easy. It's basically not even a recipe. More of a serving suggestion. It made the perfect side dish for my Chili Lime Chicken Burger topped with some salsa and a fried egg.
It is seasoned super simply with lime juice, salt, pepper, and CILANTRO. I can never get enough cilantro! And since it has a ton of health benefits, I have an excuse to put it in everything.
Scale the recipe up or down depending on how many servings you want! I cooked it for 1, but the recipe below is for 3 servings, i.e. one bag of riced cauliflower.
Cilantro Lime Cauliflower Rice
Makes: 3 servings
Ingredients:
1 12oz bag Trader Joe's Organic Riced Cauliflower, frozen
2 tsp olive oil
1 clove garlic, minced
3 Tbsp cilantro, finely chopped
juice of 1 lime
salt and pepper to taste
Instructions:
Heat a large non-stick skillet over medium-high heat. Add 1 tsp olive oil and minced garlic. Let the garlic cook for 30 seconds then add the frozen cauliflower rice.
Cook for 5-10 minutes, stirring often, until the liquid has cooked off and the cauliflower rice starts to brown. Season with salt and pepper. Squeeze in the juice from 1 lime, then add the fresh cilantro and remaining 1 tsp olive oil.
Add more salt and pepper as needed.
VOILA! 10 minutes, one delicious side.
