This is just a good old traditional italian sausage sandwich with peppers and onions, EXCEPT for the fact that grilling all of the ingredients takes it to a whole new level.
ZB claimed this was the best sausage sandwich he has ever had. And I have to agree with him! My mom always made hot sausage sandwiches (in the crock pot) with red sauce while I was growing up. But try this naked variety with peppers and onions and you may never go back.
These sandwiches are great with any sausage you have on hand. I used the Rosemary Garlic links from Cramer Farm in Howard PA. They would also be amazing with sweet italian or hot italian sausage links (both also available from Cramer Farm).

Cramer Farm is a small-scale family farm and CSA in Nittany Valley, Centre County. I’ve known the Cramers (Bruce, Diane, and Lucy) for about 6 years now. Bruce is an amazingly talented photographer and I have gotten to know him through our work together for many nonprofits, both in our community and for higher education and healthcare clients across the country.
I have been getting farm fresh eggs from their happy chickens for over a year now, and I will never go back to grocery store eggs! We quite often buy their half or whole chickens as we’ve been trying to buy more locally and avoid factory-farmed options. Every pork product I have tried (and now, with this photography project, I’ve tried them ALL) are of the absolute highest quality. I met a few of their goofy pigs last year and I was able to see firsthand that all of their animals are well cared for with room to roam on their beautiful 4-acre farm.
While the Cramers usually greet ALL of their customers at the Bellefonte Farmer’s Market in the Gamble Mill Parking Lot in Bellefonte, this year, along with other market vendors and local businesses, they have had to figure out a way to adapt and post their market offerings online!
Going to local farmer’s markets on Saturday mornings in spring and summer is one of my MOST favorite things to do… so hopefully we’ll all be able to do that soon! In the meantime, you can pre-order online in a few easy steps:

Please note that this market is local to Centre County and you should only place a pre-order if you’ll be able to pick up your haul in Bellefonte on Saturday mornings (there’s also an option to do pick-up at the farm!)
A few notes before we dive in:
I used Rosemary Garlic pork sausage but you can use whatever kind you like!
The basics here are sausage, peppers, onions, and a hearty roll. If you want to get a little extra, grill your buns too and splurge for multi-colored peppers. I also added a thin layer of mayo right on the bun topped with a slice of muenster cheese!
I have a gas grill, so the instructions below are for that! I have never used a charcoal grill and will not pretend to know how.
If you want to grill the peppers and onions (um… trust me, you very much DO), a grill basket will be key!
GRILLED ITALIAN SAUSAGE WITH PEPPERS & ONIONS
Ingredients:
1 lb sausage links (rosemary garlic, sweet or hot italian, whatever you like!)
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
1 sweet onion
1 Tbsp olive oil
1 Tbsp red wine vinegar
salt and pepper
4 hoagie rolls
optional: mayo, sliced cheese (I used muenster)
Instructions:
Chop your peppers and onion into even strips and add them to a large bowl. Toss with the olive oil, vinegar, oregano, salt, and pepper. Set aside to let them get happy and marinate.
Heat the grill to have two different zones, one high (for the veggies), one medium-high (for the sausage). Pre-heat the grill basket right along with the grill.
When you’re ready to cook, place the sausage on the medium-high side. Load the peppers and onions into the hot grill basket. You should hear a sizzle with both to let you know the grill is hot enough.
TIP: If you don’t have a grill basket, you can cook the peppers an onions on the stove! Just use a super hot skillet so you can still get some char action.Grill the sausage, turning every few min, for 10-15 min or until the internal temp reaches 160 degrees.
Cook the peppers and onions, tossing with tongs every 5 min or so, until the veggies are as tender as you like them and charred.
BONUS - Grill the buns for 30 seconds or so to toast them.
Spread a little mayo on the buns, top with a slice of cheese, and broil or grill for a bit to get some toast/melt action going.
Load the toasty buns with lots of peppers and onions + a sausage link.
DEVOUR and be happy.
